On Saturday, March 8, the first pizzeria in Poland is 50 years old. The place is open in Słupsk, at the Mleczne morning, to this day, in the unchanged recipe, a yeast cake with three types of stuffing: with mushrooms, sausage or bacon.
The owner of the Poranek bar and the oldest pizzeria in Poland, which is 50, which is 50 years old on Saturday is the Universal Spółdzielnia Społem Społem in Słupsk, existing since July 1945.
– Bar Morning was created as a milk bar in 1952, so that the working class to be where to dine. He survived to this day as a bar, where you can eat tasty at affordable prices. And it was with him on March 8, 1975 that a pizzeria started – pointed out the head of the sales department and the representative of the PSS Społem Board in Słupsk Anna Szymkowska.
She noted that the initiator of the pizzeria was the then director of gastronomy in Słupsk Społem Tadeusz Szołdra.
– He went to Milan to a culinary fair and his attention did not escape how popular pizza is. After returning, he stated that maybe it is worth introducing something similar to us, in Słupsk. And that at the bar the morning there was a small room with such a tiny dessert, it decided that we would sell desserts elsewhere, because it is the perfect place for pizza – said Szymkowska.
This is not “traditional Italian pizza”
Szymkowska pointed out that the pizza baked in the morning was not and is not a “traditional Italian pizza”, which is currently offered by many pizzerias in Poland.
– This is a yeast cake with an unchanged recipe. At the beginning they tried to do it with mutton, with smoked fish. However, those with mushrooms, but also with sausage or bacon, had the greatest taking among customers. And these three types are sold to this day. And the most gourmets like mushrooms in pizza – admitted Szymkowska.
Especially for baking pizza, a stove from chamotte bricks has been designed. He was a prototype for many later pizzerias. Szymkowska pointed out that the stove needs heating, which is why the crew comes to work early in the morning, but the first pizzas are baked only at 10.
Queues are set up in the summer
450-500 cakes are sold a day, more, about 600 in the summer season.
– Then there is always a large queue and people on the promenade at al. Polish Army sit on benches and eat our pizzas. The heart grows as it passes by. These flavors fit both older and younger. Those who have scattered around the country, the world, when they return to Słupsk, willingly come back to us and find our pizza flavors of childhood, “said Szymkowska.
Bogusław Banasiuk has been managed by a bar and pizzeria since 2012. Earlier, for 10 years, she was the deputy chef, he knows the whole production and he knows this place from scratch. In the opinion of the representative of the Słupsk board, “young people should learn from Mrs. Bogusia to manage kitchen and care for the quality of production.”
23 people work in the morning, including four only when baking pizza and spending it in the premises, while the stuffing and pizza cake are prepared in a bar kitchen.
On Saturday, on the 50th birthday of the pizzeria, the first 50 pizzas will be released from 10 for free. There will be a birthday cake at noon. The morning on its Facebook page also runs a competition for a promotional slogan for a pizza baked in the premises.
The iconic place will not disappear from the Słupsk map
Szymkowska assured that PSS Społem in Słupsk is not planning to close this iconic place. She denied appearing from time to time, especially around April 1, rumors about the desire to sell morning and pizzeria.
PSS Społem in Słupsk in the past was one of the largest employers in the city. Currently, its scope of activity is mainly retail trade in food, chemical and household.
– We have five retail stores, a bakery in which we produce bread based on old recipes, facilities for lease at the marketplace and a Podkowa shopping gallery with a three -storey parking lot, with premises for rent and a garmese. The flagship product, however, is Bar Morning and the pizzeria existing at it – summed up Szymkowska.
