Gas or induction hob? What is better and healthier?

Have you ever wondered how much time you spend at the stove? A heating plate is one of the most frequently used devices in the home, and at the same time it generates high operating costs. Given current energy prices, choosing the right solution can significantly impact your home budget. But that's not all – safety, cooking convenience and the impact on our health also matter.

A matter of safety

It's impossible to hide – induction wins here. The lack of open fire is one thing, but manufacturers also take care of a number of safeguards. The new hobs turn off automatically when the pot is removed, and the surface itself does not heat up to dangerous temperatures. With gas, there is always a risk of gas leaking or accidentally flooding the burners with oil. Parents of small children or people who live with seniors usually choose induction for this reason.

What about this health?

The issue of health is not only about myths about the nutritional value of food. Research shows that gas stoves produce an open flame and emit harmful substances into the air – including nitrogen oxides and carbon dioxide. In poorly ventilated rooms, this can lead to respiratory problems, especially in children or people with asthma. The induction hob is much safer in this respect – it does not produce any exhaust gases or pollutants.

As for the cooking itself – the method of heating the pot actually has a negligible impact on the nutritional value of the food. Induction gives us greater temperature precision, which is important when preparing delicate dishes sauces or melting chocolate. When frying foods that require very high temperatures, traditional gas is still the best – although remember about adequate ventilation.

Financial issues

Induction is initially more expensive to purchase – a good model costs about PLN 1,000, while a gas hob can be purchased several hundred zlotys cheaper. In addition, there is the cost of pots – those with a magnetic bottom, which are suitable for induction, are more expensive.

In terms of operation, prices energy are getting higher but gas it is still cheaper than electricity. Induction uses energy much more efficiently (up to 90%) than gas (about 50%). There is simply less heat lost into the air. If we use induction correctly, it may turn out to be cheaper in the long run.

Everyday comfort

Here things are not so obvious. Induction shines with cleanliness – just wipe the glass surface, while with gas we have to do a lot of cleaning the grates and burners. Cooking speed? It depends on the power of the specific model, although induction may have an advantage by better energy utilization. The disadvantage of induction is the need to use special cookware.

What to choose?

If we are concerned about safety due to small children or elderly people and we are not afraid of higher expenses at the start – induction will be a better choice. With the costs of further operation, if induction is used properly, it may turn out to be cheaper. However, if we like traditional cooking and experiment more in the kitchen than most people, gas then it is a more interesting choice.
